I wanted to ask what do you consider the most correct way to calculate the variation of the impact assesement results between two or more products, in order to determine if they differ more than 10%.

I tried many different ways, getting back different results, so I wanted to ask your opinion.

So you mean, the difference? Simplest would be to add two product systems, one for each product, as input in a process in the model graph that produces 1 final amount of comparison product (or so), enter one of the compared products with +1 and one with -1 in this new process, and calculate the results. These results will then show the difference.
