How are the default providers chosen when creating a product system ?

The description of the systems products mentions this: "Linking approach during creation: Prefer default provider". When there are several possible providers, how are the default providers chosen?

There is always only one or no default provider, this is the provider given in the exchanges table. If it is not specified or the product system creation is not to be done using default providers, the first provider found is taken. Or, of course, the connection can be manually set in the product system.
