Well, good question, but as usual in O-LCA (very rough summary): define a year, then collect all products used by the organisation for this year, then create life cycle models for these, and add them up? In openLCA, you can of course create one big process which represents the organisation and has inputs of all the products needed. You can also further refine by GHG scope etc. where needed.
