How professionally can you evaluate your own process?

I have created my own processes in the ecoinvent database, which I have simply taken over from other databases. Are the data just equally reliable ?

Well this depends of course on which data you used. You can try a review of these datasets, ideally done not by you, see e.g. here:

you can also assess the data quality of your datasets yourself, using e.g. the GLAD criteria, see here e.g.:
