If you look at the input output of a process, you can set a provider on the output as well. I want to know what does provider mean here. When you say waste, is it a method or process of disposal?

Also, I want to know if the environmental impact is evaluated when the provider is not set in the homemade process.

Well the provider is the process providing the product (or taking up the waste). Setting the provider informs openLCA about the life cycle connections (which process delivers the needed product); if the provider is not set, openLCA connects with the first process it finds for the product, unless you specify this differently in the product system creation dialogue.

Always, of course, you can change the connected processes in the product system.
