there is a somewhat minimalistic, but existing documentation on the openLCA-modules at http://greendelta.github.io/olca-modules/

But where can I find the documentation on the app itself (https://github.com/GreenDelta/olca-app)?

Yes, we do not really have that unfortunately. It should be rather straightforward but of course we are more into it. It is always a matter of time and resources...
