I am running a monte carlo simulation on a process and am interested in the results for global warming (kg CO2 eq). What are the labels of the y and x axes on the resulting graph? There are no labels, and I am confused as to what the mean and standard deviation represent. They are very far from the overall global warming kg CO2 eq amount  I got on the normal calculation.

In case you are using ecoinvent 3.9.1, maybe you are not using the latest update/corrections from Nexus (marked as Nexus version n2 or n3) where we corrected uncertainty values in the original raw data from ecoinvent that lead to some unrealistic high or low data points in Monte-Carlo, which then can be the reason for strong deviations in the "standard calculation" and the "Monte-Carlo" calculation.

The resulting bar graph plots the frequency distributions of the Monte-Carlo simulation. The histogram consists of bars that represent the complete range of the data. Each bar has a high and a low limit. Each measurement value, generated by the simulation, is assigned to the bar within whose range it falls in. The height of the bar represents the number of measurement values within it. The unit on the horizontal axis is indicated in the Impact categories input menu.

If the two calculations (standard/Monte-Carlo) are not matching, you might want to increase the number of iterations of the Monte-Carlo simulation.
