This happens if the process is used and connected in a product system. If you delete the product system, or edit it so that the process is not used, or make a copy of the process and edit it then, then you can edit it. When you make a copy, be aware that the previously existing connections are not modified. i.e. you still have the old process connected, and when creating product systems, you need to consider whether you select "prefer default provider" e.g. (because you may have then two processes with the same product).
